| Easy Homemade Christmas Fruit Mince |
This easy recipe makes quite a lot of fruit mince, but it's worth it. I recommend making an initial batch and testing out quantity and flavor first.
Much as I dislike almond flavoring, I confess that a few drops of it improves the flavor without overwhelming the other ingredients - just be sure to measure drops into an ordinary teaspoon first rather than straight into the mixture lest you inadvertently add too much 😝
Ingredients:
- 75gm dried cranberries
- 200gm raisins
- 200gm dried currants
- 50gm whole natural almonds
- 3/4 cup brown sugar
- 1/2 tsp each of ground cinnamon, cloves, nutmeg (can also add mixed spice if you have it)
- 2 strong flavored tart apples, peeled (eg: Granny Smith, Braeburn)
- Zest of an orange + zest of a lemon (and a squeeze of pip-free juice of each to help preserve the apple)
- 2-3 tbsp brandy (preferably, but use dark rum if that’s what you have)
- 2-3 small drops of almond essence
Method:
Roughly chop the fruit and nuts in a food processor or blender, or with a sturdy knife and chopping board.
Peel and grate the apple, or chop finely.
Combine all the ingredients in an airtight container with enough room on top to give it a good mix through with a spoon every couple of days. Seal and refrigerate for 2-3 weeks for the flavors to develop before use but still continuing to mix through every few days.
