| These easy vanilla cinnamon cookies are super soft with a cinnamon butter paste running through them and thin drizzles of vanilla icing on top. |
Ingredients
Serves 4
Cinnamon paste
1 tbsp butter
1 tbsp cinnamon
1.5 tbsp soft brown sugar
Cookie dough
100 gm butter - softened to room temperature
3/4 c white granulated sugar
1 egg
1.5 cups plain white self-raising flour (or 1.5 cups plain flour with 1 tsp baking powder)
1 tsp vanilla essence/extract
Pinch table salt
Vanilla icing drizzle
1/2 cup icing sugar
1/2 tbsp soft butter
Few drops vanilla essence
Boiling water
Method
Place the cinnamon paste ingredients in a separate bowl to soften.
Heat oven to 180 C fan.
In a large bowl add softened butter and white sugar, mix together with a mixer or spoon. Add egg, salt and vanilla and mix until smooth. Sift in flour and mix to a dough.
Mix cinnamon paste ingredients together to form a paste, then mix into cookie dough with a knife so the dough is 'marbled' and ribboned with the paste.
Make small balls and place twice their width apart on a baking tray lined with baking paper.
Cook for 10 minutes.
Remove from tray with a fish slice to baking rack to cool.
Put the icing ingredients in a bowl adding only a few drops of boiling water at a time to make a runny icing (a consistency which is thick but also runs from the spoon).
Use an ordinary coffee teaspoon to drizzle the icing over the cookies.
Makes 20-30 cookies
